<p><span data-contrast="auto">I am Victoria Stevenson, General Manager of new lifestyle and boutique hotel Columbus Monaco and mother of two. I am of English nationality and grew up and studied in the Principality before joining the </span><span data-contrast="auto">Institut</span><span data-contrast="auto"> de Hautes Études de Glion in Switzerland. After an international career, I returned to the Principality of Monaco where I joined the Columbus in 2014 and took over the management four years after my arrival.</span><span data-ccp-props="{}"> </span></p>

<p><span data-contrast="auto">Here at the Columbus Mon</span><span data-contrast="auto">te-Carlo</span><span data-contrast="auto"> we are very </span><span data-contrast="auto">attentive to the needs of families and regularly </span><span data-contrast="auto">organize </span><span data-contrast="auto">workshops dedicated to our </span><span data-contrast="auto">little </span><span data-contrast="auto">darlings. </span><span data-contrast="auto">D</span><span data-contrast="auto">epending on the health situation, </span><span data-contrast="auto">we try to organize activities every other month where </span><span data-contrast="auto">the children meet for 2 hours on </span><span data-contrast="auto">a </span><span data-contrast="auto">Saturday afternoon</span><span data-contrast="auto">. They</span><span data-contrast="auto"> carry out creative and culinary activities around a seasonal theme, under the benevolent </span><span data-contrast="auto">instruction</span><span data-contrast="auto"> of the hotel teams.</span><span data-ccp-props="{}"> </span></p>

<p><span data-contrast="auto">The Columbus Monte-Carlo is an establishment that aims to be authentic and in view of its geographical location allows our customers to live like locals. It therefore seemed obvious for us to </span><span data-contrast="auto">organise</span><span data-contrast="auto"> activities for customers’ children but also for the children of the Principality and its surroundings. We then imagined these workshops with our team and launched them last Halloween.</span><span data-ccp-props="{}"> </span></p>

<p><span data-contrast="auto">Columbus Monte-Carlo</span><span data-contrast="auto"> is</span> <span data-contrast="auto">located in Fontvielle</span><span data-contrast="auto">, a district which was reclaimed from the sea 30 years ago</span><span data-contrast="auto">. It</span> <span data-contrast="auto">was </span><span data-contrast="auto">the Principality's first lifestyle hotel, designed and founded by David </span><span data-contrast="auto">Coulthard</span><span data-contrast="auto">, the former Formula 1 driver, in 2001, and acquired by London &amp; Regional Hotels in 2010.</span> <span data-contrast="auto">A complete renovation was carried out in 2018, offering </span><span data-contrast="auto">a </span><span data-contrast="auto">brighter atmosphere with the opening of the lobby onto the neighboring Rose Garden through its large bay windows.</span><span data-ccp-props="{}"> </span></p>

	<p>With so many baby food options on the market, it’s easy and convenient to simply pop a few jars or pouches in your weekly shop, but do the advantages really outweigh the benefits of making it yourself? When my first child was born and he was ready to start solids, I remember wanting to give him natural food options and I bought <a href="https://amzn.to/3o5nZwI" rel="nofollow noopener" target="_blank">The Baby-Led Weaning Recipe Book by Annabel Karmel.</a></p>
<p>I followed her guidance and found it to be really useful. I started by offering savoury steamed and blended vegetables, introducing them one at a time. I also offered carrot and cucumber sticks which also doubled as great, natural teethers. I later introduced fruits in the same way.</p>

	<p><em><strong>Important note: don’t leave your baby unattended whilst eating or teething on vegetable sticks as they can be a choking hazard.</strong> </em></p>
<p>I remember right at the beginning buying some jars and pouches as a standby for those times as a parent you or your child is just too tired to wait. Upon opening the first jar, I was immediately put off by the smell. After trying it myself, I decided to throw it away and not feed it to my son. I think this was a really good lesson I learnt as a first-time parent, if I didn’t like it and wouldn’t eat it myself there was no way I would be giving it to my child. The pouches though – and I am specifically referring to the Ella’s Kitchen brand - I absolutely adored! Ella’s Kitchen contains no nasties and the pouches were so convenient for travelling, parks, beaches, and they allowed my child to easily, and with very little mess, feed himself once he got the hang of it, even from a very young age. I definitely felt they were worth the money even though the cost of pouches adds up quite quickly compared to home-made baby food which is a very low-cost way to feed a baby.</p>

<p><strong>**TOP TIP**</strong> Bananas have to be the easiest food to feed a baby. I would simply grab a banana and pop a teaspoon in my bag. When my baby was hungry, I would simply unpeel and use the spoon to gently scrape and mush the banana into a sticky, gloopy consistency with no bits and simply feed it to them. No packaging &amp; no bowl required. I did that a lot!</p>

<p><strong>Invest in a quality blender.</strong> Mashing and stirring certain foods like banana, roasted squash &amp; avocado is an easy start but a blender like a <a href="https://amzn.to/3nZK9R6" rel="nofollow noopener" target="_blank">Nutribullet</a> is a whiz at baby food prep saving you time and ensuring the consistency of the purées are suitable for babies new to solids. <p><strong>Choose seasonal and local produce.</strong> Fresh, local, and even organic foods are full of nutrient-rich goodness which is perfect for babies. Where possible, buy from local farmers markets. <a href="http://bit.ly/3982045" rel="nofollow noopener" target="_blank">Here</a> are some local farms offering organic fruit and vegetable baskets.To avoid waste you can also use pre-frozen veggies to create your baby blends and can even choose to batch cook and store your fresh baby foods in the freezer. I used an ice-cube tray to freeze baby purées and once frozen stored them in airtight Ziplock bags. When my baby was hungry, I simply took out a few cubes of purée and in a microwave safe bowl heated (and cooled) it to have ready for the next meal<em>.</em> According to Annabel Karmel you can keep frozen baby foods in the freezer for up to 3 months.</p>

<p><strong>Mixing things up</strong></p>
<p>Babies develop a taste for whatever you give them, so once you have introduced all the individual veggies and fruits, get creative with blends like spinach and avocado or sweet potato, beetroot and green beans. Steaming is a fantastic way to keep in as many nutrients as possible but boiling and microwaving are also suitable ways to cook the produce before blending. If your purées are a bit thick you can add boiled water until they are smooth and the right consistency.</p>

<p>Making baby foods can be a lot of fun, as can watching your baby react to new flavours they have never tried before. It is perfectly normal for your baby to spit out new tastes as they get used to them. Don’t be disappointed if they won’t eat everything you prepare the first time, especially strong flavours. They say that your baby might need to try a new flavour up to 8 times before they get used to it. Be persistent, babies who are exposed to a large variety of foods at a young age tend to be less fussy eaters as toddlers and beyond.</p>

	<p>Have you ever tried to cook your favourite curry? So you searched your favourite chef’s recipe and found their version of the classic Chicken Tikka Masala or Butter Dahl curry (for you veggies), or you even purchased a great Indian cookbook, looked at the recipe and found at least a full page of different ingredients and spices? Even as a chef who loves to cook and spend time in the kitchen, I usually just close those sorts of books and think to myself “Yeah, I’ll just order in tonight”. As we have so many picky eaters in the world, it sometimes restricts us, chefs, from using the best ingredients. I have met a great deal of people who can’t stand eating chicken off the bone; this leaves chefs using chicken breasts, which doesn’t give maximum flavour and can dry out really easily when cooking.</p>

	<p>So I wanted to put a stop to it. Not out of arrogance but because my dream is to create the best dishes, so I am going to use the best produce that will give you maximum flavour. But it doesn’t stop there, I can’t create the best with just the produce. I’ve had to learn for myself the best methods to get the most out of every ingredient that I use. Once I chose the equipment I wanted to use, (my 200 kg Tandoor oven), I then had to learn how to work one; controlling the heat of the Tandoor, how to cook meat in something that can heat up to 400ºC without it getting burnt (whilst not getting burnt myself). Then comes perfecting the recipe. So I asked myself: How can a British man perfect Authentic Indian food?</p>
<p>I’ve been blessed to cook alongside native Indians and Sri-Lankans when traveling all around Sri-Lanka where I understood that Authentic Indian food is nothing like the British curries we get in London and Birmingham. No matter where I go, I always get someone come up to me and say that my food isn’t proper Indian food because it doesn’t burn your tongue, leaving you sweating out, and drying your tears with a serviette. I have found that what makes a “proper curry” to some Brits has nothing to do with flavour, taste, and texture. It’s just a dish they use to show people how “macho” by ordering and eating the hottest curry they can find. They don't seem to be able to handle my homemade chili sauce though and that’s always fun to watch! Some people believe a curry has to have a lot of spices in it to make it a curry or taste exotic. The truth is, a curry can be whatever you want it to be, as long as you enjoy it.</p>
<p>For me, curries aren’t just about flavour, they are about the whole experience. I personally enjoy food much better when I understand how much love and passion has been put into making it. When you watch Indians cook, they create a great atmosphere whether they’re cooking at home, in a restaurant, or on the street. You see the way they pour the ghee in that smoking hot pan on top of an open fire. If you look closely they aren’t just throwing everything in at once and *bang* you have a curry. No, they add things in at the right time in the right order. You'll see that they only have one or two dish options because they have perfected those dishes for generations. This is what I wanted to bring to the South of France: passion, love, theatre, an exciting atmosphere whilst giving you The Authentic Taste of India.</p>
<p>In India, the best food originates from what the poor people cook to survive. They can't afford a page full of spices and ingredients that you would see in your average recipe book. In fact, they wouldn’t really have names for their curries, they would just call it a lamb, chicken, or chickpea curry. Depending on what they have available, they would make it hot, sweet, mild, dry, or in a Masala sauce. I’ve also had the help of my dad, whom I have crowned my “official taster”, as he traveled India for five months in 1978, way before it became a tourist and commercial hotspot.</p>
<p>Throughout those five months, all he had was Authentic Indian food cooked by the locals themselves. Every single Indian dish I have cooked, be it curries or street food, he’s tasted. And if it wouldn’t take him back to India or if it gave him the feeling that the Indians would be insulted by what I created (even if it was good), I would try again and again until the day would arrive, when he would take a bite, close his eyes, smile and say: “That takes me back, that is proper Indian food”.</p>
<p>Another factor when eating from Harry’s Tandoor is that I encourage people to eat the Indian way… with their hands, without cutlery. Eating with your hands enhances the flavours. Cutlery changes the taste of your food when using silver, metal or even biodegradable cutlery. Of course, it’s not for everyone so cutlery is always provided at my events, but if you are looking for a complete Indian experience, I recommend eating with your hands.</p>
<p>I have mastered the way of getting the best out of each ingredient to get maximum flavour using a griddle pan or barbecue.</p>
<p>Here are some tips: Don't cook the meat all the way through on the barbecue. Simply caramelise it to get the flavours of the barbecue, which will then also be incorporated into your Masala sauce. Cook slowly it until it falls off the bone. If you follow these tips the meat will literally fall off the bone. Moister than an oyster!</p>
